The Best Ever Raw Lemon Vegan Cheese Cake

Raw Vegan Lemon Cheesecake 


Ok so this is not officially 'cheesecake', no cows were harmed yes!
 I believe this is so much more delicious than a lump of philly cheese with sugar mixed in... and my old fav condensed milk is no where in sight.

I have made a few of these over time, different ingredients... whether it's because of the brand new whipper of a blender or the simple tasty ingredients, this works, and if you love citrus and lemon like me.... you will want to give this yummy zesty creation a go! 

The ingredients to this delish lush lemon tart/dessert..... simple, wholesome, whole foods.
Activated almond, Himalayan salt and date base with creamy lemon coconut oil cashew nut middle....
The difference with this one, compared to a tart you buy at a cafe... the smoothness, the fact that it is not jelliesh....  and the zest!! Young Living Lemon oil is an AMAZING edition!!!

So the whole food ingredients:



Whole food Base:
1 cup of Almonds
Soaked overnight, drained and blended with 
1 cup of dates 
Pinch of PinK Salt

Place onto dish, mould, with baking paper
Flatten blended mixture into dish, set aside in fridge.

Whole food Lemon filling:
2 cups of cashews soaked for 4 hours
1/2 cup of maple / rice malt syrup
Juice of 2 Lemons (1/2 cup) 
6 - 10 drops of YL Lemon oil (depending on your zesty metre) Im a 10
3 tbsp coconut oil
1 tsp vanilla essence or paste....
a generous pinch of pink salt!




Directions:
Place all filling ingredients into the blender, whip, whip it , whip it good....
So when it looks creamy and all mixed together...
You are ready to pour over base.....
Use spatula to create even top or pattern. 




TOPING:
Decorate with fresh or frozen blackberries and cherries
 Dust with shredded coconut.
Place your clean eating creation in the freezer or fridge!
and eat in 2 hours........ or earlier if you cannot wait!

A Poem For My Dad

Days with Dad



In the early days
I was your blossom
You were my everything

I admired you so much,
when I was young 
How you held yourself, 
presented and always had fun

I became obsessed with your moustache,
I thought it was really sweet.
I even had a crush on Tom Sellick,
who I wanted to meet.  

I balled my eyes out
when you turned around that day.
You just didn’t look like my dad,
I didn’t know what to say.

You had shaved off your moustache 
It was totally gone from your face.
I couldn’t look at you for a while,
and remember hiding all over the place.

A heart so full
A love so strong
In my eyes
You could do no wrong.

A perfect match,
for your gorgeous wife
Giving her everything,
she wanted in life.

Sometimes I thought you were total opposites,
at polar ends of the scale.
However you would balance and complement each other,
Mostly calm, with not much hail.



Dad gave the best comforting cuddles 



You were always there,
to provide love and support.
You would take me to calisthenics, 
netball and to the tennis court.

Netball was fun with you as my coach,
always teaching me to try.
Shooting hoops, running around the eastern reserve,
and enjoying a big fat pie.

Helping dad out with the cubs and scouts,
was exciting memory with the boys.
I ended up ditching Brownies,
because cubs gave me so much more JOY.

Back then,
girls were not allowed.
So for me hanging with my dad,
I felt kinda proud.

My biggest love growing up was,
out sailing with the breeze.
Dad helped me every step of the way,
and made me feel at ease.

We had so many incredible adventures together,
These memories I will hold onto forever.

You taught me how to
face my fear.
Heading out into waves,
that looked so severe.

Out on the water I learnt how to focus,
create visualisations and set my intent.
Sailing all over Vic,
And up to QLD our family went.

I would not have had the sailing success,
if it weren’t for you.
Incredible sails, quality fittings,
a polished yacht, I appreciate everything you do.

We got lost within Melbourne,
a lady called out “are you for real?”
Smiling I was quite chuffed and knew
he was the real deal.

Through you I learnt that whatever I put my mind to,
I could achieve.
The secret formula,
to jump right in and just believe.

At the Colac Yacht Club,
you were friends with all.
Coaching the juniors, operator of rescue boat 2, 
you absolutely had a ball.

I also learnt about boys, drinking beer 
and the chugalug. 
Regattas, camping trips at easter,
winning wine glasses, trophies and many a mug!

When mum got sick,
you were the first to help.
A signature dish of 2 minute noodles, 
tin mushies, onions and cheese melt.

Winning the Aussie Champs, 
you had to get toads out of my boat.
You guided me towards first place,
and gave me so much hope.

From all the words of advice,
I have heard over the years.
One will be forever wedged,
and gave me quite some fear.

“Don’t get a boyfriend,
its too hard to break up!”
I took this very seriously,
until I had enough. 

Visiting Sam in Canberra,
was an EPIC trip by far!
We made movies, celebrated with Anzacs, shared lots of laughs,
all in our peugeot car!

You were caring, so cautious,
worrying and often full of woe.
I often heard ‘Be careful”
and "watch the bloody road."

We always loved our walks in nature,
finding birds, frogs and possums.
There is one thing that will never change,
I will always be your blossom.

The last 4 or so years of my dads life we incredibly hard... Dementia took over in the end and my darling dad was not the same man I grew up with... He made us cry, he made us laugh with his crazy comments, behaviours and new found perception of the often confusing and frustrating world around him. Technology and life got to be too much and it was time for my dad to leave this physical world. The bacterial infection proved too much for his sensitive system.
Not a day goes by that I don't think of you...... 
I was your angel...  now you are mine xx




Positive thoughts, Brain health and mindful exercises are so important in order to live a life full of longevity with purpose, power and potential. I would like to dedicate one of our YL blends to dad.... we did used this oil on him, along with coconut oil..... however his disease was fierce, rapid and very progressive. 
Lets all look after our brilliant brains, magnificent minds, beautiful bodies and sensitive souls xx

When we really stop, listen to the world around us, feel our intuition and tap into our own selves. 




Thats when the magic happens. 

If we feel blocked, cluttered, trapped and not working properly our decisions start to become clouded and we find it hard to take in the peace and serenity that we receive from Mother Earth. 

Cleansing, detoxing and clearing our environment is so important to enjoy inner stillness and peace of mind. 

Lately, I have been asked from friends, clients and team members about oils, earth supplements and other pristine products for detoxing and letting go! 
I love this topic......

And it got me thinking and reading about ways to release overwhelming feelings, baggage that maybe holding us back. 
I thought about our minds, our influences, the people we live with our families, work colleagues, our local community groups..…… the way we move our body!

How can we improve on our lives? 
Be more vibrant healthy and happy and not stressed, too busy and exhausted.

Moving on from challenges can be difficult and things may flash back into our thoughts when triggers arise along the way.

I believe that one of the simplest things would be (other than more sleep of course) to start with love and gratitude and to focus on the things we have, what we already hold within us..… rid yourself of what does not serve.

Our LIVER: It holds a lot of things including our emotional baggage. Here are a few facts about the liver and ways to nourish care for and love it :) 


The liver is the largest digestive gland of the body and has many functions; it’s focus is with metabolism, synthesis and storage of nutrients, detoxification, balance of hormonal levels, production of body heat and bile secretion. Headaches, eye strain, muscle spasms, joint pain and menstrual problems can also be related to liver issues because the liver governs these tissues. Emotionally, there can be restlessness, inability to get things done and general agitation with liver dysfunction. One may feel compulsive and may tend to complain. Anger is the emotion most associated with the liver.
    
There are many ways to cleanse the liver. A variety of herbs, fasting, massage, essential oils, lemon packs, etc. Of course what you choose to eat is critical for a healthy liver. Restricting intake of processed sugar, fatty fats (indulge in avos!), and refined processed easy foods, is important in sustaining vitality, as these foods tend to inhibit proper function of the liver and could possibly bring about chronic fatigue, lack of concentration, apathy, intestinal problems and spur a rise in blood pressure.

Essential oils are very helpful in supporting and cleansing the liver. Massaging the abdomen in a clockwise direction with essential oils in a carrier oil can encourage detoxification of the liver. A gentle rocking massage motion on the liver will help to mobilize and strengthen the organ. Salt baths (pink, epson and sea)  with essential oils are another way of detoxing the body. Of course, full body massage can stimulate the production of red blood cells, cleanse the acids from the tissues and balance many body parts and organs.
    

Some oils that have been proven to affect the liver in a positive way are:
    
Helichrysum is a wonderful oil for a tired and sluggish liver. It helps stimulate production and regeneration of new blood cells. It is also effective in detoxifying people from drugs and tobacco.
    
Lemon is a great cleanser, both internally and out. The liver loves fresh lemon juice squeezed in water and ingested daily. The essential oil can be rubbed on externally and absorbed into the blood, which then rejuvenates and clears out stagnation in the liver. It promotes healthy blood cells and tissue growth.
    
Cypress is warming and uplifting – just what a fatigued liver needs! It aids in relieving achy muscles, abdominal cramps and menstrual challenges. It also soothes menopausal symptoms (one of the liver’s function is keeping hormones balanced).
    
Clary Sage also helps with menopausal symptoms and can help ease nervousness and anxiety. Clary Sage has the innate ability to bring anger up to be released (liver’s emotion is anger) so only use clary when it is appropriate to vent emotion.
    
Lavender and Rose are essential oils to help calm down the liver’s anxiety and aggression. They can help relieve headaches, migraines, pains in the body and most liver complaints by soothing tensions and alleviating stress.
Rosemary enlivens the spirits and stimulates the mind and body. It is a liver and gallbladder stimulant and detoxifier.

Many green smoothies can also help with liver detoxification. Add parsley, kale, chard, watercress, cilantro (coriander), beet and dandelion greens to increase liver function. As long as you have a bit of fruit in there too, it will still taste good. It’s gotta taste good, right? I usually will add a drop of lemon oil too, for an added boost.




Young Living have an incredible whole foods natural multi vitamin that is straight from the earth. I have about 60 to 120 ml a day half a bottle some times, it really depends how my body is feeling and if i need extra energy and nourishment, feel what your body needs when It comes to NingXia Red, I don't believe you can have too much.
Lots of Citrus Goodness in this whole food drink.
There are so many healthy vitamins and minerals in every drop and lots of oils to enhance to bioavailability too :)

Make your own lip smacking lip balm.....

Who doesn't LOVE Luscious lips and a nice collection of lip balms to go with it...
Most of us love lip balms, yes,  I would go so far as to say, that I was quite obsessed with it,  especially during my high school years.. And now my daughters have taken over... at the ripe old age of 5 and 7. ... an my beautiful niece :) 

There was one moment when I even remember during year 11 my chemistry teacher Mr Osmond say to a group of us "you girls put that on all the time in class... do you actually know what is in that stuff, its full of synthetic toxic chemicals" being teenagers,  we all shrugged and keep applying our balms... we knew better right.

Not really...

It's only in the last 7 years since expanding my natural health and wellness knowledge that I have become aware of unnecessary chemicals that lurk within commercially and industrially fragranced personal care / house hold products/ air freshener industries. .... And unfortunately some essential oil companies.......
Once you delve deeper you began to realise the full impact these synthetically fueled products are having on our mother earth, ourselves and will have on generations to come...

I especially would like to mention the colourful eye catching lip balms and glosses you can see out the front of chemists and novelty shops... over xmas it was huge... 5 balms in cool cylinders for 9.95.... (they caught my eye!) I was going to post a pic of the ingredient label,  of all of the numbers and codes and petroleum compounds, however, thats not what this is about.  Its so awesome how aware family are becoming when it comes to home and body products, yes you can go to the cheap shop of one of the four big supermarkets.... and get things for 2 or 3 dollars... but thats what you should expect in quality... cheap... I choose the highest quality world leading giving and transforming company..... :) We know where our oils come from, you know where the rest of you whole food ingredients are from. If it's from your back yard then that is even better........ self sufficiency is the key to happiness right...
So lets be JOYOUS, lets be self sufficient and toxin free with this whole food nourishing revitalising and tantalising recipe for lush lips!! xx





Choc Peppermint Lip Balm:

Ingredients

  • 2 Tbsp beeswax
  • 1 Tbsp coconut oil
  • 1 Tbsp cacao butter
  • 1 Tbsp macadamia oil
  • 1 Tbsp shea butter 
  • 1/4 tsp peppermint oil




(Shea butter not pictured) 

Equipment You’ll Need

  • 20 - 24 lip balm tubes

Directions:

Gently melt the cacoa butter, coconut oil, macadamia almond oil, shea butter and beeswax in a double boiler 
 (or in a glass bowl set on top of a sauce pot of simmering water).

Remove from heat and then stir in the peppermint essential oil.

Quickly pour the melted oil into the tubes. You have to move very quickly before the oils start to set. 

I used a small funnel  which promptly got clogged! I do not recommend using a medicine dropper because it will quickly clog up as well!

Allow the lip balm to set, place in fridge if needed and then cap the containers. 


You are making lip balms!! How awesome is that, great to give gifts at your YL classes, at workshops and events. Have fun with changing the flavours and aromas around, Stress Away Lip balm sounds nice, along with frankincense, lush lavender and Ylang Ylang.....









Yummo, It feels so empowering to make your own lip balm and other natural beauty products, especially when its such a part of our every day lives….

Zola, Indie and I made these for Zola's 7th Birthday Party plus some Natural Perfume sprays.... the kidlets loved their goodies to take home and a new way to view their supermarket products......
